Guinness cupcakes or cake

Durante estas fiestas navideñas tuve dos cenas seguidas donde cada invitado lleva algo para compartir. Adivina, qué llevo yo normalmente? :P
Total, que me faltaban horas y decidí llevar el mismo postre a las dos cenas y "matar dos pájaros de un tiro".  

Primero os cuento un poco de historia: El mítico pastel Guinness es una receta que creó la chef Nigella Lawson y es famosos en todo el mundo. Representa una pinta de la famosa cerveza irlandesa, cuerpo negro rubí y espuma blanca marfil.
La Cerveza Guinness es una cerveza elaborada en la cervecería St Jame's Gate de Dublin para toda Europa. Es una cerveza tipo Ale (alta fermentación) y estilo Stout (en inglés significa corpulento o sólido).

He cogido la receta de Nigella y he modificado algunos ingredientes que son difíciles de encontrar por otros muy parecidos además de hacer su versión en cupcakes. 

El resultado es un bizcocho muy esponjoso y una crema espectacular! Ah y un truco, hacerlos un día antes de servirlos o regalarlos ;)



During these Christmas holidays I had two dinners in a row where each guest bring a dish to share. guess what I normally bring..:P

The reality was that I didn't have time to cook so I decided to bring the same dessert to both parties and "kill two birds with one stone". 
But first, let me explain you some history: The famous Guinness cake is a recipe created by the chef Nigella Lawson. It represents a pint of the famous Irish beer, a very black body and a fine white froth.
Guinness is brewed at the brewery St James's Gate in Dublin for all Europe. It is an Ale type (high fermentation) and Stout style. Normally at the supermarket, at least in my area, you will find the Original Guinness. 
So, I have taken the recipe from Nigella and I've modified some ingredients which are difficult to find for those which you can find easily in the supermarket. And, instead of a cake I've make cupcakes.
The outcome is a very spongy cake and an spectacular cream! A tip: bake them one day before serving or giving as a present. 





Ingredientes (18 cupcakes o un molde de 23cm)
250ml guinness
250g mantequilla sin sal
75g cacao en polvo
400g de azúcar
142ml de yogur griego 
2 huevos L
1 cucharadita de extracto de vainilla
275g de harina
2'5 cucharaditas de bicarbonato de sodio

Topping
300g de queso crema
150g de icing sugar o azúcar glacé
125ml nata para montar

Ingredients (18 cupcakes or 23cm tin)
250ml guinness
250g unsalted butter
75g cocoa powder
400g sugar
142ml greek yogurt or sour cream
2 large eggs
tbsp. vanilla extract
275g plain flour
2'5 tbsp. bicarbonate of soda

Topping
300g cream cheese
150g of icing sugar
125ml double cream or whipping cream




Precalentamos el horno a 180º y colocamos las capsulas en el molde o forramos un molde redondo de unos 23cm de diámetro con papel de horno y mantequilla.

En un cazo, calentamos la Guinness junto con la mantequilla cortada a dados hasta que ésta se derrita. En este punto, añadimos el azúcar y el cacao en polvo ya con el fuego apagado y removemos. Por otro lado, batimos el yogur junto con los huevos y la vainilla. Mezclamos las dos mezclas. Por último, añadimos la harina junto con el bicarbonato y batimos todo bien.

Llenamos las cápsulas hasta 2/3 partes y horneamos durante 30-40 minutos o hasta que un palillo salga limpio.

Dejamos templar sobre una rejilla.

Para la crema primero montamos la nata. Luego batimos la crema de queso junto con el azúcar glas. Juntamos los 3 ingredientes y batimos hasta que tengamos una mezcla consistente. 

Con la ayuda de una manga pastelera, decoramos los cupcakes con el topping.


Preheat oven to 180ºC and place cupcake's cases in the molds or butter and line a 23 cm springform tin.

In a pot heat the Guinness together with  sliced butter until it's melted. At this point whisk in the cocoa and sugar.  Beat the greek yogurt with the eggs and vanilla and pour it into the first mix. Finally, add flour and bicarbonate and whisk gently. 

Fill 2/3 of cases and bake for aprox. 30-40 minutes or until a stick/tester comes out clean. 
Once baked let them cool on a rack.

For the topping, first whip the cream. Then, whip the cream cheese until smooth, sieve over the icing sugar and beat them both together. Add in the whip cream and beat until it makes a spreadable consistency.

Use a piping bag to decorate.
